Instructions
1. Soak all ingredients in this package in room temperature water for about 30 mins.
2. While ingredients are soaking, boil a pot of water with a silkie chicken*, a few slices of ginger and a splash of shaoxing wine (these ingredients are not included and optional but highly recommended) for about 3 mins after water comes to a boil.
3. Drain the chicken, clean the pot out, and put the chicken back in the clean pot with 8 cups of water.
4. Drain the herbs and put all herbs except goji berries, jujube dates and honey dates into the pot with the chicken and water.
5. Bring the soup pot to boil and then simmer on low for 30-40 mins.
6. Add the goji berries, jujube dates and honey dates to the pot and simmer for another 30-40 mins.
7. Add salt to taste.
8. You can simmer a little longer if you want a more concentrated flavor or add more water if the herbal taste is too strong.
*You can use Dried Shiitake Mushrooms instead to keep it Vegan/Vegetarian.
